Sometimes I crave a fresh pesto, but unless it is a planned event, fresh basil is not in my refrigerator. Plus pine nuts are usually too expensive and basil too perishable to have in the grocery cart every week. So, instead you can make this quick and easy with some basic ingredients. Spinach, raw sunflower seeds (or salted are fine, as long as the seeds have no shell), fresh Parmesan (or Romano or Asiago–any really hard cheese), extra virgin olive oil and voila. Makes a nice option for pizza sauce or top your favorite gluten free pasta!
1 1/2 c fresh cut spinach (packed in cup), 1/2 c extra virgin olive oil, 1/4 c grated cheese (see above), 1/4 c sunflower seeds. Place in food processor and process until smooth. Additional olive oil may be needed to get the desired consistency.
